Cabbage Guacamole

There are some foods like cabbage that everyone knows they should be consuming. The problem is that cabbage is one of those foods that limit your food imagination. In other words, you just can’t seem to create enough tasty recipes to enjoy using it.

Here is a recipe I got from my sister Betty, who collected it from her friend, who got it from her nutritionist.

Cabbage Guacamole


Ingredients:


1 large green Cabbage

4 large tomatos

3 large Avocados

1/2 cup diced Cilantro

4 medium Lemons

Directions:

 Wash and dry ingredients

Dice all ingredients

Mix all ingredients into large bowl, remove seeds from lemon

Toss ingredients together and let stand for twenty minutes to allow ingredients to fuse with lemon

Serve with Blue Corn Tortilla Chips

Serves 4

SHM Tip:
 This recipe can be served as a side dish, enjoyed as a snack or served as a small lunch along with a whole wheat roll. 
It keeps extremely well over night if you have any left.
 Purchase medium ripe avocados.
 If possible purchase organic blue corn chips.
