In my personal pursuit of reclaiming my health and preventing further disease, legumes and beans are major foods that I consume three to four times a week. Cooking your own beans is the best way to keep their nutritional value. I cook a large pot of pinto beans once a week. I freeze half of them in a glass container and I keep the other half in the refrigerator. Pinto beans have protein, B vitamins and fiber. They are delicious in burritos, stews, ranch beans, dips, soups, etc.
