Lentil and Spinach Soup

Mastering The Law of Nutrition requires that you eat a variety of plant-based foods. This Lentil and Spinach Soup takes very little preparation and is a classic recipe found in almost every Plant Based cook book. You can tweek it to your liking by adding other vegetables besides spinach. Soups and stews are hearty, filling and nutritious. Don’t underestimate the power of a bowl of soup served with a salad and a veggie wrap for dinner. I have been consuming this kind of trio once a week for the last twelve years. Easy Smeasy!

 

 

 

 

Ingredients:

1 medium sweet onion diced small

3 cloves of garlic finely diced

1 cup lentils washed

1 medium bay leaf

Black pepper to taste

Salt to taste

1 bunch of spinach chopped

1/2 cup fresh parsley finely chopped

1 quart water

Next:

In a large pot bring to boil a cup of water

Add onion and garlic and cook for 5 minutes or until onion is tender.

Add lentils and a quart of water and bay leaf.

Bring to boil and simmer for 30 minutes or until lentils are done.

Add salt and pepper.

Remove a cup of lentils and allow to cool.

Place cup of lentils into Vita Mix and puree.

Add puree back into the lentil soup.

Add spinach and parsley and cook for 10 more minutes on low heat.
