Lentil and Spinach Soup

Mastering The Law of Nutrition requires that you eat a variety of plant-based foods. This Lentil and Spinach Soup takes very little preparation and is a classic recipe found in almost every Plant Based cook book. You can tweek it to your liking by adding other vegetables besides spinach. Soups and stews are hearty, filling and nutritious. Don’t underestimate the power of a bowl of soup served with a salad and a veggie wrap for dinner. I have been consuming this kind of trio once a week for the last twelve years.
