Every Lady’s Simple Delight Cookie

We eat for two reasons: we eat to sustain life and we eat for pleasure.

What then shall we eat?  This blog is dedicated to all those mom’s who are on a personal pursuit for nutritious snacks.  The following recipe has satisfied my desire for something delightful time and time again. You never have to compromise your health protocol to serve your family an enjoyable, fun snack. Before you know it you will have trained the family to think critically about even their snacks.

Every Lady’s Simple Delight Cookie


1 cup Sucanat
1 cup organic Earth Balance
2 organic eggs
2 cups spelt flour
1 Tsp. baking powder (Aluminum free)
1 Tsp. baking soda (Natural)
¼ Tsp. sea salt
2 cups organic thick oats
1 cup chopped walnuts
1 cup unsweetened organic fine coconut
2 tsp. natural vanilla


In a large bowl, cream thoroughly sugar, Earth Balance and eggs with hand mixer.

In a separate bowl mix the dry ingredients together thoroughly.

Add dry ingredients to cream mixture, mixing together. It will be sticky and thick.

Chill in refrigerator for 20 minutes.

Roll into desired size.  I usually roll into 1 inch balls.

Set on cookie sheet and flatten with small glass into cookie shape.

Bake at 350 degrees for 10-12 minutes or until firm and golden brown on the bottom.

Remove from cookie sheet and place on cooling rack or platter.  Allow to cool before serving.

Simple Health Hint: This cookie recipe is very forgiving.  You can leave out the vanilla or enjoy adding a variety of nuts and still have a beautiful cookie to enjoy.
